Domaine des Malandes, created in Chablis in 1972 by Lyne Marchive, was taken over by her children Richard Rottiers and Amandine Marchive in 2018. The pair have pioneered some new innovations, including the conversion to organic farming, back in 2019. The Domaine farms Petit Chablis, Chablis, Chablis 1er Crus and Chablis Grands Crus. Guénolé Breteaudeau has been in charge of the winemaking since 2006, with the goal of enhancing the terroir with elegant and delicate vinification. We thank Domaine Des Malandes for their pressed Grand Cru grapes and ongoing support.

Truffle Martinez
The original Martinez was the precursor to the Martini. With sweet vermouth used in place for dry vermouth and traditionally sweetened with a liqueur. For our truffle version we keep things light with a white vermouth, drive the minerality with a dash of fino sherry and finish with truffle oil as a garnish only as it can quickly overpower
