A simple and delicious twist on the Tom Collins using juicy, fragrant beets in the height of their season. Lending a clean eartiness and beautifully deep colour to this cocktail.

Tasting notes

Beetroot, maple, cardamom.

Ingredients / Measures

  • / 30ml Renais
  • / 1 muddled beetroot
  • / 10ml lemon juice
  • / 10ml cardamom infused maple
  • / soda

Step 1

Start by adding cooked beetroot into your shaker, muddling to break it up. Add all your other ingredients to a shaker and shake as hard as you humanly can for 20 seconds to smash all the beetroot inside.

Step 2

Strain through a fine strainer over ice and top with soda. Garnish with a slice of beetroot and serve.
